This June “8th at 8” will be BCNC’s last virtual event for 2021 as we are hoping to come back to our regular schedule of in-person events in July. And for this final Zoom presentation, we wanted to feature FOOD as Belgians are so well known for “living to eat”! On our schedule will be 3 individuals with different specialties and we know it will please many palates, virtually and/or in the near future.

Chef Roger DeClercq - Sonoma Gourmet

Sonoma Gourmet manufactures gourmet pasta sauces, olive oils and salad dressings. Founded in 1990 by Roger DeClercq, the company has spent years refining the technique, locating the finest ingredients and perfecting the craft to ensure wonderful meals. As a chef, Roger doesn’t believe in compromising flavor, ever. That’s what sets his company and its products apart. At Gourmet Sonoma, they cook in small batches using the absolute best ingredients. And having Sonoma Valley as their backyard pantry goes a long way to making great food.

Experimenting, refining, and creating is what keeps him going. Roger will give us some information about himself and about his food, and how to use his sauces to make great meals quickly.


Nicolas Servais - Brussels Bistro


Belgian restaurants in San Francisco have all closed. So, thanks to Jean-Baptiste Piron’s recommendation, we went South to reach out to Brussels Bistro located in San Clemente and in Laguna Beach. WOW, do they have a fantastic Belgian menu of food & beers!!!  And co-owner Nicolas Servais accepted our invitation to speak with us Northerners about his Belgian culinary adventure in his new world.

Nicolas studied Hotel Management in Namur, Belgium, and worked at different hotels in Brussels before coming to America! Brussels Bistro is the fulfillment of a childhood dream of Nicolas and co-owner Thomas Crijns. Friends for 40 years, both in the restaurant industry for over 25 years, they love to share with their guests a part of their culture which they are so attached to. They serve, and ship an authentic Belgian experience for all senses!


Pierre Smit - The Rice Tart

Pierre is not officially a cook or a baker, and nowhere close to the level of our first two presenters. But here is the story of why we have him on the panel for this event. Over the years, he liked to tell friends about a delicious Belgian dessert that can’t be found around the Bay Area. A favorite dessert originally from the region of Vervier, the rice tart is not very complex if you know the right way to make it. So, Pierre researched the best techniques & ingredients, and used his partner for tasting his creations of the Tarte au Riz. 

Then in 2019, he brought 5 Rice Tarts to the Independence Day Picnic Celebration of the Belgian Club of Northern California. Pierre was really testing the flavors he had attained with fellow Belgians. Result: we could not even find any crumbs at the end of the picnic. Now, by popular demand, Pierre will be showing his recipe. This is your chance to learn how to bake a tasty Rice Tart so you too will be able to bake this famous Belgian dessert to share with your friends.

BCNC Treasurer, Fabienne Sowa-Dobkowski will be our moderator extraordinaire!

At the end of this presentation, you may just be hungry for some food produced by one or more of these Belgians in California.
